Tricolour Sabudana Kichadi

(Tiranga Sabudana Kichadi)


Ingredients
1 ½  cups  small sabudana (sago)
2 medium size potatoes boiled and chopped
6 tsp roasted  peanut powder
1 green chilli chopped
1 tsp red chilli powder
3 tbsp ghee
3 tbsp oil
1 tbsp cumin  seeds
A pinch of green food colour
¼ tsp hing powder
Few curry leaves
Salt, sugar as required.
1 ½ tbps lemon juice
Little chopped coriander leaves.
Method:
Divide and soak each half cup of sabudana in three vessels overnight. In one vessel add the green colour and remaining both keep white. Next day, you can see the pearls nicely soaked in water.

GREEN LAYER
In a kadai, add  1 tsp oil and 1 tsp ghee.  When it becomes hot, add  little cumin seeds, hing powder, curry leaves, chopped green chilli.  Then add the 1/3 chopped potatoes and sauté for another two minutes. Add green sabudana, mix well.  Add   2 tsp roasted peanut powder, salt and sugar as required  and mix well . Add lime juice, mix well and add chopped coriander leaves. Remove from gas and keep aside.

WHITE LAYER
In a kadai, add  1 tsp oil and 1 tsp ghee.  When it becomes hot, add  little cumin seeds, hing powder, curry leaves.   Then add the 1/3 chopped potatoes and sauté for another two minutes.  Add one part of white  sabudana and mix well.   Add  salt and sugar,  2 tsp roasted peanut powder and lime juice mix well.   Remove from gas and keep aside.

ORANGE LAYER
In a kadai, add  1 tsp oil and 1 tsp ghee.  When it becomes hot, add  little cumin seeds, hing powder, curry leaves..  Then add the 1/3 chopped potatoes and sauté for another two minutes.  Add  second part of white  sabudana and mix well, add  salt and sugar,  2 tsp roasted peanut powder, 1 tsp chilli powder, lime juice.  Remove from gas and keep aside.

NOW IN A PLATE ARRANGE THE LAYERS:  FIRST GREEN, FOLLOWED BY WHITE AND ORANGE TO FORM A TIRANGA.
