(Puri Kilangu, Puri Alu, Urilaikilangu masala )
Ingredients
Potatoes - 4
Onion - 1.5 (sliced)
Ginger - 1 " slice (finely chopped)
Green Chillies - 2 or 3 (chopped)
Turmeric Powder - 1/4 tsp
Salt - as needed
Cilantro - for garnish
For Tempering
Oil - 2 tblsp
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Cashew Nuts - 8-10
Channa Dal - 1 tsp
Urad Dal - 1 tsp
Dry Red Chillies - 2
Curry Leaves - 1 spring
Method
1. Peel the potatoes, wash it and cut it into cubes.
2. Take the potato cubes in a pan with about 2 cups of water and salt. Boil and cook it till the potatoes are soft.
3. Most of the water must have been absorbed by now. If there is little water thats ok. Mash up few of the potato pieces with a masher or the back of a spoon. Keep this aside.
4. Heat oil in another pan and splutter the mustard seeds and cumin seeds.
5. Add the dry red chillies, channa dal and urad dal. Fry till the dals turn reddish brown in colour.
6. Next add the cashew nuts and fry it.
7. Add the curry leaves, turmeric powder, chopped ginger and green chillies. Fry for half a minute.
8. Next add the sliced onions and saute it till they turn tender. Do not brown the onions.
9. Next add the potatoes along with the left over cooking water. If you want, you can add little more water.
10. Mix everything, check for salt and simmer it for 5 minutes.
11. Finally add some cilantro, switch off and serve.
Tips
- You can also add some green peas to give a nice green colour.
- Add a few drops of lemon juice at the end to give a nice lemony flavour.
Serving Suggestion
- This is a very famous sidedish with the Indian Bread 'Puri' commonly known as
puri kilangu or
puri alu.
- This is also stuffed inside Indian crepes 'Dosas' and is known as
Masala Dosa.
- This can also be served with rice or chappatti.
- This masala can also be used to make
Potato Bondas or
Bread Rolls.
