Pepper Mushroom Masala

                                                - submitted by Dahlia on 01-09-2008

Ingredients
Mushroom - 1 lb
Onion - 1
Tomato - 1
Ginger garlic paste - 1 tsp
Garlic - 4 cloves (crushed)
Green chilly - 1
Corriander powder - 1 tsp
Chilly powder - 1/2 tsp (or lesser)
Turmeric powder - a pinch
Garam masala - a pinch
Oil - 1 tblsp
Mustard/Cumin seeds - 1/4 tsp
Salt - to taste
Lemon juice - 1/2 lemon
Cilantro - for garnish

Ingredients - 2
Garlic - 4
Pepper - 1/2 tsp - 1 tsp (as per your heat level)
Cumin seeds - 1/4 tsp

Method
1. Coarsely grind the ingrediants fro list-2 and keep aside.
2. Heat oil in a pan, temper some mustard/cumin seeds and curry leaves.
3. Add some onions and green chilly and cook till they are soft.
4. Add tomatoes and ginger garlic paste and let everything cook together till nice
masala is formed.
5. Add the mushrooms and cook it covered with little water. Mushrooms have a lot of
water inside so very little water is needed to cook them.
6. Add all the dry spices(turmeric powder, chilly powder, corriander powder and salt) and mix
everything together.
7. Cook uncovered till all the water evaporates and add the above ground mixture.

8. Toss everything together and fry for a minute..
9. Sprinkle few drops of lemon juice, garnish with cilantro and switch off.

         When to add salt?

Reply :-

Add the salt when you add all the other spices.

        Hi Dahlia,

Is there any special precaution to be taken while cleaning mushrooms? I have heard different versions of elaborate cleaning and hence have been wary of trying out any mushroom dish so far. Should simple wiping the tops of the mushrooms be sufficient or anything else?

Reply :-

Hi Meera, I just wipe the mushrooms with a clean kitchen cloth. I think that is sufficient. Nowadays mushrooms are cultivated and hence is very clean.
