Mayonnaise

Mayonnaise or Mayo is a basic sauce which is used to make many other sauces. Mayonnaise is used as a dip, as a spread for sandwiches etc. The key to a great tasting mayo is the freshness of the ingredients that is easily possible when you make it at home.

Ingredients
Egg - 1 (large)
Oil - 1 1/2 cup (Light olive oil or vegetable oil)
Dijon style mustard - 1 tsp
Vineger or Lemon Juice - 1 tblsp
Salt - to taste
White Pepper - to taste

  
Method
1.Place egg, mustard and vinegar in a food processor or in a bowl if using hand blender. Process until well blended.
2.With the machine running, slowly drizzle the oil to make a thick mixture.
3.Season to taste with salt and pepper and keep refrigerated.
 
Serving Suggestion
     - Spread the mayonnaise on toasted bread to make a sandwich.
     - Use it as a dip for vegetables and bread sticks.
     - You can also use it for tacos, burgers etc. 
 
Tips
     - Vegetarians can use 1/2 lb of paneer instead of egg and follow the same recipe. Vegans can use tofu.

         Hi Shreya,
         Eggless Mayonnaise would taste different than the one with egg. But here's a simple eggless mayonnaise recipe : -

Blend to a smooth sauce the following ingredients - 1/2 lb Paneer (or tofu), 1 tblsp of lemon juice or vineger, 1.5 cups of olive oil (you can also use vegetable oil ot any refined oil if you don't find olive oil), salt and pepper as needed.
Use tofu to make vegan mayonnaise.You can also flavour your mayonnaise with garlic, herbs or mustard.

        What is Dijon style mustard? Can we use anything other then this?

        Hi Asu, You can just skip it if you cant find it. It adds a nice mustard flavour to the sauce.

       Hi Jayshri. I have never tried without eggs but I'm sure there are many recipes online. There are also many eggless versions available in the market.

          Yes Chitralli, Its raw egg. When we add the lemon juice and oil, all the eggy smell goes off. Fresh home made mayonnaise tastes very good.

         Thats approximately 350 ml of oil.
