(Chicken Soup with Pasta, Chicken Pasta Soup)
Pasta soup is a comforting, hearty dish that blends the texture of pasta with a flavorful meat and vegetables. It is a popular dish that is part of the Italian cuisine. It is a combination of ingredients like onions, garlic, pasta and aromatic herbs like oregano, creating a deliciously nourishing meal. This soup is quite versatile and can be made using vegetables that you have on hand. It is perfect to be served as a light starter or a filling main dish especially on rainy or chilly days.
In our house Soup is always a favourite. I specially prefer to make soups with wild rice, pasta or noodles that makes it very filling. I like to add some chicken but you can make the soup pure vegetarian by skipping it. Talking about vegetables, I’ve added carrots, capsicum and cauliflower since that is what I had on hand today. You can add any vegetables like mushroom, broccoli, potato, beans, green peas, corn etc. based on your preference. Try this out and share your comments.
Recipe For Pasta Soup
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Serves : 4
Ingredients
- Small Pasta (Like Elbow Pasta) – 1.5 cups
- Chicken – 4-5 small pieces
- Olive Oil – 1 tbsp
- Onion – 1 small (chopped)
- Garlic – 3 cloves (minced)
- Carrot – 1 (chopped)
- Celery – 1 stalk or Capsicum – a small piece (chopped)
- Cabbage – 1 small piece (chopped)
- Salt – to taste
- Oregano – 1 tsp
- Crushed Black Pepper – 1 tsp
- Red Pepper Flakes – 1/2 tsp
- Lemon – 1/2
- Cilantro – as needed
Method
- Take the chicken pieces in a pressure cooker and cook for 4-5 whistles.
- Heat a big soup pot, add olive oil. Add chopped onions, garlic, carrots and celery. Saute till it softens.
- In the meantime the pressure from the cooker would have gone down. Strain the chicken pieces and take it in a plate.
- Add the chicken stock to the sauteed vegetables and bring it to a boil. Add required salt, oregano, black pepper and red pepper flakes.
- Chop the chicken into small pieces. Keep it ready.
- Add the pasta to the boiling soup. Cook for about 10 minutes.
- Add the chicken pieces also to the soup and cook for another 5 minutes till the pasta is cooked soft.
- Switch off and add chopped coriander leaves and lemon juice. Enjoy it hot.
