About Carrot
Carrot is the most commonly used root vegetable that is used as part of many dishes in many countries. In India it is used in various dishes like biryani, fried rice, noodles, soups, kurmas, sambar etc. It is one vegetable that is present in most homes throughout the year along with onions and tomatoes. There are also quite a few dishes made just using carrots.
Carrots are usually bright orange in color which comes from the high amount of alpha and beta carotene present in them. Delhi red carrots are available during winters. These are preferred for its bright red color especially in making desserts like Gajar ka Halwa. In US, I have also come across yellow and purple varieties of carrots. I have read from the internet that there is also a black variety.
Carrots are a powerful anti-oxidant and is also supposed to be improve vision. Carrots can be enjoyed raw or cooked. It has a appealing crunchy texture with a sweet taste. It is used in making juices, soups, curries and desserts. Since it has a natural sweet taste, it is perfect for making desserts like halwa, kheer and carrot cakes. Here are a few recipes that uses carrots as the main ingredient or as part of the dish. I have shared a variety of dishes ranging from carrot chutney, carrot rice and carrot vadai. I have shown most of the dishes using orange carrots. Those who live abroad, please do not hesitate to buy and substitute the other colored carrots in the same dishes. It will surely add more color without altering the taste of the dish. Enjoy!!
