Idlis and Dosas are a staple food in all the southern states of India, Tamil nadu, Kerala, Andhra Pradesh, Karnataka and Telangana. These have been existing since centuries and has been mentioned in both Tamil and Kannada works of ancient days. Similar variants are also found in Goa, Maharashtra and Orissa. Idli and dosa varieties are also common in other neighboring countries like Sri Lanka, Nepal, Bangladesh, Singapore, Malaysia etc.
I am amazed at the person who invented the dishes idli and dosa. It first starts with the batter preparation depending on the type of idli/dosa. After the batter is prepared, it has to be fermented for the best results. After refrigerator has become part of every household, idli/dosa batter is mostly available everyday in south indian homes. People make a big batch of the batter and refrigerate it. It saves so much time on busy working days.
