Rumali Roti, is a popular and traditional Indian flatbread, particularly cherished in North India and Pakistan. The name rumali literally means handkerchief in Hindi. This bread is super thin and pliable like a soft cloth.
Rumali Roti is typically made using All Purpose Flour (Maida) or from a mixture of maida and whole wheat flour. A soft dough is prepared, it is then rolled out into a thin sheet and then cooked on an inverted kadai or a hot griddle. This makes it to be cooked swiftly and evenly.
Rumali Roti is traditionally served with rich and flavorful North Indian curries, kebabs, and tandoori dishes. This is served in weddings, birthday parties and other family functions. Though it is little tricky to make at home, you can still try it.
Recipe For Rumali Roti
Ingredients
- All-purpose flour (maida) – 2 cups
- Yogurt – 2 tbsp
- Oil – 1 tbsp
- Salt - to taste
- Warm water - as needed for kneading
Method
- In a large mixing bowl, combine the all-purpose flour, yogurt, oil, and salt.
- Gradually add warm water and knead the mixture into a soft and smooth dough. Cover the dough with a damp cloth and let it rest for about 30 minutes.
- Divide the dough into small lemon-sized balls. Take one dough ball, dust it lightly with flour and roll it out into a very thin circle. The key to good Rumali Roti is to roll it as thin as possible.
- Heat an inverted tawa or a large concave griddle on high heat. Alternatively, you can use an upside-down kadhai.
- Once the tawa/ kadai is hot, carefully place the rolled-out roti on it. Cook for about 30 seconds or until bubbles start to form.
- Flip the roti and cook the other side for another 30 seconds. The roti should be cooked quickly and should not develop brown spots. It should remain soft and pliable.
- Remove the cooked roti and fold it into a triangular shape like a handkerchief. Make the rest of the rotis.
