I love the recipes here. Thay have phenomenal authentic taste with much less work. The Mushroom Fry was wonderful. I have made it twice. I only added a little extra of each spice and once I had some left over shredded chicken and added to make it a main dish. I am trying the Bainghan Ka Bartha tonight. Thank you for sharing these recipes!

I prepare a cold version of this recipe. After mashing the eggplant, just add salt, chopped green chillies,a tea spoon of tamarind juice and chopped onions.Mix it well and serve immediately. Goes well with rice as a side dish. Try it!
