3 Milk Cake

(Tres Leches Cake, Ultimate Moist Cake)


Ingredients

All Purpose Flour - 2 cups
Eggs - 5
Sugar - 1.5 cups
Salt - a pinch
Milk - 1/2 cup
Baking Powder - 1 tsp
Baking Soda - 1/4 tsp
Vanilla Essence - 1 tsp

 

For Pouring over the finished cake
Condensed milk - 1 can
Evaporated Milk - 1 can
Heavy Cream - 1 pint
Vanilla Essence - 1 tsp

 

Method
1. Take the eggs in a mixing bowl and beat it well with an electric blender. The egg mixture should become light and creamy.
2. Mix the sugar and vanilla extract with this.
3. Mix all the dry ingredients (flour, salt, baking soda and baking powder) in a seperate bowl.
4. Add the flour mixture and milk alternatively to the egg mixture while mixing it continuously.
5. After the cake mixture is ready, transfer it to a pyrex dish or a cake pan. If using a pyrex dish, the final cake can be served in the same dish itself.
6. Bake it for about 30 minutes in a 350  degree oven. (till the inserted toothpick comes out clean)
7. After the cake has cooled down a little , transfer it to the serving dish. It will be difficult to transfer after pouring the milk.
8. Prick the cake with a fork throughout the cake. The will enable the milk mixture to get absorbed in the cake very easily.
9. Mix all the ingredients under 'for pouring' in a seperate bowl.
10. Pour this mixture throughtout the surface of the  cake. The cake will instantly absorb most of the liquid.
11. Cover the cake and let it rest in the refrigerator for few hours.
12. While serving if the cake gets dry, you can some more of the milk mixture.
13. Top the cake with whipped cream or sweetened coconut flakes or any fruits. The cake in the picture is topped with some whipped cream and cherry pie filling mixture.
