My name is Dahlia Twinkle, basically from Kanyakumari district in South India, now living in Chennai with my husband and two kids. A researcher by profession, experimenting with new recipes has always been my passion. 

First and foremost, I thank God for bestowing me with the wisdom to create this website and all the recipes. I take great pleasure in thanking my husband for the technical and moral support. I am indebted to my parents, my in laws and my friends for their kind co-operation and encouragement. I love my daughter and son for always supporting and cheering whenever I cook something new.

Having lived in different parts of India and USA, I have had the opportunity to try out varieties of food. This site has a collection of all my cooking experiments and the recipes that have been passed on to me by my family and friends. Some recipes are illustrated in the traditional way while others are modified taking into consideration the busy lifestyle and health issues. 

Most of the recipes fall under four main categories:

  1. Traditional Indian recipes: These are some recipes that have existed in our country for many many years. e.g :- Poori, Chicken Biryani etc.
  2. Variations of traditional recipes: This includes traditional recipes with new ingredients. It also focuses on the people who have many diet restrictions and cannot enjoy traditional food. e.g :- Ragi Chapatti, Oats Dosai etc.
  3. Indian recipes for foreign ingredients:  There are so many Indians living abroad who may not have access to the traditional Indian ingredients. But the good new is that most of the foreign fruits, vegetables and grains can be easily adapted to Indian flavors. You will find many such recipes in this site. These will surely help our friends who stay abroad.Many such ingredients have started penetrating out Indian market as well. So our Indian friends who want to experiment could surely use these recipes as a guide. It will also encourage our viewers from other countries to add an Indian touch to their native produce. e.g :- Broccoli Bajji, Zucchini curry etc.
  4. Foreign Recipes: In today's world, everything is available everywhere. With the growth of science and technology, people are exposed to different cultures, cuisines and raw materials very easily. More and more people are interested in trying out something new. You can try out many international recipes in our site that have been tried and tested in our Indian kitchen. e.g :- Quinoa Pilaf, Pancakes etc.

Overall, you will find the site interesting and full of tasty food. The presentation and explanation may not be very professional but definitely simple to understand. It will surely motivate anyone to cook.Bachelors, newly weds, new cooks or anyone new to Indian cuisine can try these recipes. It is explained in very simple english with detailed steps. You can post in any queries or doubts any time. It will be replied within 24 hours.

I hope these recipes will surely help to improve your cooking. A person with lot of information is a knowledgeable man. But a wise man puts the knowledge to application. So I encourage you to try out all the recipes.

I just found your site and it really looks great. Thank you for sharing your knowledge, very inspiring. Lots of new recepies to try out.
Can you help me out how to best fry chicken parts (incl. bone) which have been marinated in spiced yoghurt without them sticking to the bottom of the pan? I used coconut oil. The flavour was exellent, but I think there may be an other better way to fry this and I think you have a lot of experience.

What kind of pan did you use for frying?? Usually we prefer frying is a heavy bottomed cast iron skillet. For special occasions we prefer deep frying. It comes out crispy and juicy.

I used a cast iron heavy bottomed pan. But I have been thinking I might have put too much chicken peaces at once to fry. Oh yeah... If you crowd the pan, chicken will start releasing its juices. so few pieces in medium high heat will do the trick.

Hey, thank you for your wonderful site. I want to try out your chicken stock/broth as i am interested in broths/bone broth. In your recipe you have said and given a link to khozi rasam. But in that recipe again chiken is used. Is there any other variation?.

Ofcourse here I have used whole chicken.. But you can follow the same recipe and make with bones alone.

Hi Dahlia, Can you please post recipes with country chicken as the ingredient. You may be aware of the adverse side effects of consistently eating broiler chicken. Country chicken meat is little firmer but the texture and flavor is superb. But people prefer broiler as it is faster to cook and also the new generation don't know how to cook it. Some recipes of country chicken will help.

Can you or someone in your community of friends help me. Several decades ago I was flying back home from a convention and met a fascinating man from India. We talked for awhile and he offered a sweet dessert. It looked like a doughnut hole and was sticky. The closest taste wise that I have had was baklava. Can anyone identify what this could have been? And where to order online? (If I fail at baking)

Hi Nick... Based on what you described, I have a feeling you are talking about Badusha... Can you google and see the images to make sure it is that same sweet that you tasted?

The other possibilities that I can think of are jalebi and sweet khari..

For years, I have loved Indian food but, for some reason, it never occurred to me that I could add this cuisine to my repertoire. Since I set this goal for myself, I have been combing websites for recipes. Then, I discovered yours. The recipes are clear, and appear easy to follow. I will let you know just HOW easy after I cook a few. My next challenge, going to the Indian store I just discovered to learn more about the ingredients. Thanks for giving my humble menu "options." You can only endure pot roast, steak, and stir fry so long.

Hello and thank you for this interesting site.
I live in Austria and will host our village's priest who is from the state of Talangana and some friends for lunch. I plan to make an Indian sampler consisting of curd rice, potato fry, beetroot poriyal, and spinach curry. Would you please recommend drinks that will complement this selection of foods?
