Curry Leaf Powder

(Karuveppilai Podi,  Karuvepilai Thuvayal, Karuvapila Chammandhi)


Ingredients
Curry Leaves - about 1 cup packed
Urad Dal - 2 tblsp
Dry Red Chillies - 5
Peppercorns - 5
Garlic - 1 clove

 

 

Method
1 Dry roast the urad dal, channa dal, dry red chillies, garlic  and peppercorns for 5-8 minutes on low heat till it turns golden brown in colour.

2 Add the curry leaves and toss them constantly till they turn crisp (about 4-5 minutes). It is very important for the flame to be in low. If not all the dals would get burnt.

3. Turn off the heat and cool everything.
4. Make a powder of everything using a mixie or blender.

5. Store this in a dry container for upto 6 weeks.

6. Mix the powder with white rice and top with some ghee/oil to make instant curry leaf rice. You  can also serve as a side for idli, dosa chappatti etc.

 

 

 

Tips

     - After roasting all the ingredients, grind it along with enough water and required salt to make 'Karuvepilai (Curry Leaf) Thuvayal'.
