Aapam with Rice Flour

Aapam or Palappam is a traditional breakfast made in Kerala commonly. I've already shared the recipe with raw rice. Today's recipe is about making aapam using rice flour. This is specially useful for people who have just moved abroad or bachelors who do not have access to mixie/ grinder. I've tried this recipe during the initial days when I moved to USA. You can try making this using any good brand of raw rice flour. This recipe was shared by my friend and it comes out very well. Do try this out.

Recipe For Aapam with Rice Flour

Preparation Time:  8 hours (including fermentation)
Cooking Time: 30 minutes
Serves: 4

Ingredients

  • Rice Flour - 2 cups
  • Rava (or Coarse Rice Flour) - 2 tbsp
  • Water - 1/2 cup
  • Yeast - 1/4 tsp (soaked in 2 tbsp water)
  • Sugar - 1 tbsp
  • Coconut Milk - 1/2 cup

Method

  1. We first start by making a cooked paste (Kappi). This is what helps make the aapam spongey.
  2. Take the 2 tbsp of rava (or course rice flour) with 1/2 cup of water in a sauce pan. Cook this on low flame constantly stirring till it thickens and is well cooked.

  3. Let this paste cool down.
  4. In a big bowl, take the rice flour and add this prepared paste (kappi) to it. Add the yeast mixture, sugar and 1/2 cup water to this.

  5. Mix everything together. Cover and let it ferment for 7-8 hours.

  6. After the batter has fermented mix in coconut milk and required salt. Mix together to adjust the consistency of the batter.
  7. Let the batter rest for about 15-20 minutes before you make aapams.
  8. Heat a appam pan, pour a ladleful of batter and swirl the pan to spread the batter.

  9. Cover and let the aapams cook for about 3 minutes. The edges will be crispy forming a lace and the middle will be soft.

I didn't follow the recipe.

Rava is wheat right? Why are you using it in aappam ??

Also what is the difference between rice flour & rice paste in the recipe ? By rice paste are you referring to rava ?

Hi, Rava is Semolina.. It is made from wheat. Kappi paste is made with coarse rice or rava. This helps in making the aapams spongey.
