Beans with Dumplings

                                          - submitted by Dahlia on 12-18-2007

Ingredients
Beans - 1 cup (soaked and cooked)
Onions - 1 (finely chopped)
Green chillis - 2 (finely chopped)
Garlic - 8 cloves (minced)
Tomato - 2 (blanched and pureed)
Chilli powder - 1 tsp
Corriander powder - 1 tsp (optional)
Tomato sauce - 3 tsp
Olive Oil - 1 tblsp

For dumplings
Cornmeal - 4 tblsp
All purpose flour - 4 tblsp
Baking powder - 1 tsp
Egg whites - 2
Milk - 3-4 tblsps

Method
1 Combine all the ingredients under ‘dumplings’ in a bowl to form a thick paste like consistency. Keep this aside.
2 Heat olive oil in a wide pan, saute the onions, green chillis and garlic till the onions become transparent.
3 Add tomato puree, chilly powder, corriander powder, salt and cook for 5 minutes.
4.Add the cooked beans and tomato sauce and cook for another 5 minutes.
5. When the sauce begins to boil, add a spoonful of the prepared dumpling batter over the  sauce.

6. Repeat with the rest of the batter. Do not mix after adding the dumplings. Cover and cook on medium heat for 10 - 15 minutes.
7. Grnish with cilantro or chopped parsley.
