Kozhukattai is one healthy South Indian snack variety. It is made as an evening snack to be served with tea but most importantly made by Hindus during Ganesh Chaturthi. My grandma was an expert in making varieties of Kozhukattai - with coconut, green gram, channa dal, jackfruit filling etc. I will try to share the recipes one by one.
Recently, I made Coconut Kozhukattai for my family. I decided to try the sugar free version for my diabetic family members. The sugar free sweetener sometimes leaves an aftertaste in some dishes. For this kozhukattai, the sugar free sweetener worked very well. Of Course, there were a few challenges that I faced. Unlike jaggery, the artificial sweetener doesn't give that stickiness. So the stuffing doesn't hold together easily. In Spite of that, the kozhukattais turned out pretty good. So here is my recipe for Sugar Free Kozhukattai. Do make it if you have a diabetic family member.
Recipe For Sugar Free Kozhakkattai
Preparation time: 15 minutes
Cooking time: 15 minutes
Serves: 3-4
For Stuffing
Ingredients
- Coconut grated and partially grinded – 1 cup
- Sugar Free Sweetener – 5 tsp
- Cardamom - 4-5 (powdered)
- Ghee – ½ tsp
Method
- In a kadai, mix all the ingredients together and cook it till the coconut gets well roasted.
- Cool the mixture and keep it ready.
For The Covering
Ingredients
- Fresh rice flour - 1 cup
- Water -1.5 cup
- Oil – 2 tbsp
- Salt - ¼ tsp
Method
- Mix the rice flour with room temperature water, oil and salt. Make it as a smooth batter with no lumps.
- Take this in a kadai and cook for few minutes on low flame.
- Keep stirring continuously and cook till it forms a ball.
- Switch off the flame and let this cool a bit. Keep it covered with a towel to prevent it from drying.
- When it is cool enough to handle, knead the dough. Make small lemon sized balls out of it.
- Take one ball and roll it out into a small circle. This can be done just by pressing with your fingers or using a plate between polythene covers.
- Take about a tbsp of the prepared coconut stuffing and keep in the middle of the rolled out dough.
- Carefully close the dumplings with your fingers. Shape it as a round ball or like a money bag. Keep the dumplings covered while you make the rest.
- Arrange the kozhukattais in idli plates of steamer plate. Steam for 10 minutes.
- Let it rest for another 5 minutes before removing from the cooker.
Detailed steps to make Sugar Free Kozhukattai
In a frying pan, mix all the ingredients together and cook for few minutes till the coconut gets roasted.
Cool the mixture.
Mix the rice flour with room temperature water, oil and salt. Make it as a smooth batter with no lumps.
Take this in a kadai and cook for few minutes on low flame.
Keep stirring continuously and cook till it forms a ball.
Switch off the flame and let this cool a bit. Keep it covered with a towel to prevent it from drying.
When it is cool enough to handle, knead the dough. Make small lemon sized balls out of it.
Take one ball and roll it out into a small circle using your fingers or by pressing between plastic covers. Spoon in some of the prepared coconut filling and keep in the middle of the rolled out dough.
Carefully close the dumplings with your fingers and shape it as a round ball or like a money bag.
Keep the dumplings covered and make the remaining.
Arrange the kozhukattais in idli plates and steam for 10 minutes.
After steaming, a shine comes on the kozhukattais. Let it rest for few minutes before removing.
Enjoy them warm for the best taste.
