Dudhi Vadi (Steamed Bottle Gourd Fritters)

Dudhi vadi or doodhi vadi is a tasty steamed bottle gourd fritters best served as a snack with with tamarind chutney.

Rcipe For Dudhi Vadi

Ingredients

  • Bottle gourd (Dudhi) – 1 (about 3 cups grated)
  • Gram Flour (Besan) – 2 cups
  • Rice Flour – 1 cup
  • Rava – ½ cup
  • Green Chilies – 3-4
  • Coriander Seeds – 1 tsp
  • Ginger – 1” (grated)
  • Coriander Leaves – ½ cup (Chopped)
  • Curry Leaves – few
  • Turmeric Powder – ¼ tsp
  • Dry Red Chilies – 2
  • Sesame Seeds – 1 tsp
  • Cumin Seeds – 1 tsp
  • Asafoetida – 1/8 tsp
  • Curd – 1 to 1.5 cup
  • Oil – for frying

For Tempering

  • Oil – 2 tbsp
  • Cumin Seeds -  1 tsp
  • Sesame Seeds – 1 tsp
  • Curry Leaves - few

Method

  1. Peel and grate Dudhi in a large bowl. 
  2. To it add besan, rice flour, rava in 2:1:0.5 ratio.
  3. Grind the following ingredients on incher mode - green chillies, coriander seeds and ginger. Adjust the ingredients as per your spice buds. Add it to the bowl with other ingredients.
  4. Also add 1/2 cup fresh chopped coriander leaves and curry leaves.
  5. Other additional ingredients to be added are turmeric powder, chopped dry red chillies, sesame (til) seeds, Cumin (Jeera) seeds and Asafoetida (Hing).
  6. Mix everything adding fresh 1-1.5 cup Dahi (Curd).
  7. Mix everything with hand and add water if only required to adjust consistency. You can keep consistency same like kothimir wadi or even knead like dough.
  8. In the last, mix just 1-2 big spoon of oil. 
  9. Pour the mixture in oil greased thali and steam for 15-20 min on medium flame.
  10. Once cooled cut in pieces of choice.
  11. In a pan, heat oil, make tadka of cumin seeds (jeera), sesame (til) seeds, chopped kaddipatta (curry leaves) and allow to splutter.
  12. Shallow fry the cut pieces of Wadi in this tadka on low to medium flame so that tadka doesn’t burn. 

Serving Suggestion

  • Serve the hot dudhi vadi with tamarind chutney.
