Healthy Chicken Salad

Salads are a great way to fill your tummy if you are on diet. This chicken salad is quite filling as well as tasty. The dressing is made with mayonnaise and yogurt which makes it super creamy and delicious. You can add or change the other ingredients depending on what you have on hand. 

Recipe For Healthy Chicken Salad

Ingredients

  • Chicken Breast / Paneer - 250 gm
  • Lettuce - 5-6 leaves
  • Carrot - 1/2
  • Apple - 1/2
  • Onion - 1/2
  • Almonds - 10
  • Cashews - 10
  • Raisins - 1/4 cup
  • Dried Cranberries/ Dried Kiwi - 1/4 cup
  • Cilantro - 2 springs (chopped)

For Salad

  • Mayonnaise - 1/4 cup
  • Curd - 2 tbsp
  • Lemon juice - 2 tsp
  • Salt - 1/4 tap
  • Pepper - 1/4 tsp

Method

  1. Cut the chicken (or paneer) into small cubes. Marinate with salt, pepper, garlic powder, red chili powder.
  2. Grill it for 5-7 minutes till it is well cooked.

  3. Mix all the ingredients for the dressing in a bowl.

  4. Chop all the vegetables, nuts, dry fruits in a bowl. Mix the dressing and grilled chicken pieces.

  5. Let it rest for few minutes for the flavours to blend. Enjoy.
