(Fresh & Healthy Quinoa Salad)

Quinoa salad is a light nutritious dish with the goodness of whole grains and fresh vegetables. Quinoa is naturally rich in protein and fiber. This salad is easy to prepare and very filling. It is ideal for health-conscious dieters or for a quick dinner on busy weekdays.
I got introduced to Quinoa during my stay in US and I’ve tried many recipe with it like Quinoa Upma, Quinoa Pulao, Quinoa Soup etc. This salad is another simple and tasty dish. I have added some Indian flavours to my salad to suid to my taste. Give it a try and enjoy.
Recipe For Classic Quinoa Salad
Preparation time: 10 minutes
Cooking time: 15 minutes
Serves: 2
Ingredients
- Quinoa - 1 cup
- Water - 2 cups
- Onion – 1 (finely chopped)
- Cucumber - 1 (finely chopped)
- Carrot – 1 (finely chopped)
- Tomato – 1 (chopped)
- Colorful Capsicum (chopped) – ½ cup (I used green, yellow and red capsicum)
- Boiled Corn or Chickpeas – ¼ cup
- Roasted Peanuts – 2 tbsp
- Spring Onion – 1 sprig (finely chopped)
- Fresh coriander leaves – 1 sprig (finely chopped)
- Olive Oil - 2 tblsp
- Lemon juice – 1 tbsp
- Salt - to taste
- Crushed Black pepper – about 1 tsp or to taste
- Chaat Masala – to taste (optional)
Method
- Rinse the quinoa 2-3 time to remove its bitterness.
- Cook the quinoa with salt and water in 1:2 ratio in pressure cooker for 2 whistled or in open vessel for about 12–15 mins.

- Let it cool slightly and fluff it up.
- In a big bowl, add cooked quinoa, all the chopped vegetables, cooked chickpeas and roasted nuts.

- Add olive oil, lemon juice, salt and crushed black pepper. If you want to add an indian touch add some chaat masala. Adjust the spices to your taste.
- Toss everything gently and garnish with spring onion greens and coriander leaves.

Serving Suggestion
- This can be served as a light meal or as a starter salad.
- It can also be served as a side with sandwiches or grilled chicken.
