Onion Curry or Dahi Pyaz ki Sabzi is a rustic and flavorful dish that is commonly seen as part of the spice-rich cuisine of Rajasthan. Made primarily with onions as the star ingredient, this curry transforms simple kitchen staples into a hearty and satisfying delicacy.

This curry is especially popular in arid regions where fresh vegetables were historically scarce. It is best enjoyed with hot bajra roti, chapati or pulao. This onion curry is simple yet flavourful that delivers a bold taste with every bite. Ever since I saw this recipe in a TV show, it's been one my go to side dish with chapati.

Recipe for Onion Curry

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 2-3

Ingredients

  • Onion (Big) - 2 + 1
  • Tomatoes - 2 (pureed)
  • Ginger Garlic Paste - 1/2 tsp
  • Garlic - 3 cloves
  • Turmeric Powder - 1/4 tsp
  • Red Chili Powder - 2 tsp
  • Coriander Powder - 1 tsp
  • Cumin Powder - 1/2 tsp
  • Garam Masala Powder - 1/2 tsp
  • Kasuri Methi - 2 tsp;
  • Curd - 1 cup (beaten)
  • Salt - to taste
  • Asafoetida - a pinch
  • Oil - 2 tbsp
  • Cumin Seeds - 1/2 tsp

Method

  1. Chop 2 onions in big chunks. Add 1 tbsp of oil in a kadai and saute the onion chunks till it becomes soft.
  2. Remove it in a plate and keep aside.
  3. Add another tbsp of oil in the same kadai, add cumin seeds and asafoetida to it.
  4. Finely chop the remaining 1 onion and add to this. Saute this till it turns golden brown.
  5. Crush the garlic cloves and add to this. Also add the turmeric powder and ginger garlic paste. Saute for a minute.
  6. Puree the tomatoes and add at this stage. Add the red chilli powder, coriander powder, cumin powder and salt. Saute for 4-5 minutes until oil separates from the masala.
  7. At this stage, reduce the flame and add the beaten curd. Also add the sauteed onion chunks. Add 1/2 cup water if you need additional gravy. Cover and cook for about 5-6 minutes.
  8. Finally add kasuri methi and garam masala. Check for seasonings and adjust as per your taste. Cover and cook for another 2-3 minutes. Switch off and serve after 5 minutes of resting.
