Here is a puri made using poha (puffed rice) and besan (gram flour). This poha puri is made in Maharashtra.

Recipe For Poha Puri

Ingredients

  • Poha – 1 cup
  • Besan – 1 cup
  • Kanik – ½ cup
  • Ginger, Garlic, Green Chilies – as required
  • Coriander Leaves - handful
  • Pudhina - handfil
  • Curry Leaves - handful
  • Ajwain Seeds – ½ tsp
  • Sesame Seeds (Til) – 1/2 tsp
  • Turmeric Powder – ¼ tsp
  • Red Chili Powder -  to taste
  • Garam Masala Powder – ¼ tsp
  • Coriander-Cumin Powder – 1/2 tsp
  • Salt -  to taste
  • Sugar – to taste

Method

  1. Wash and soak thick poha with little extra dash of water for 10-15 minutes. This makes them super soft. 
  2. In a large bowl mash this soaked poha with hand till it forms almost like a soft dough.
  3. To it add 1:2, kanik : besan, finely chopped fresh coriander leaves, pudhina,kadipatta, ajwain seeds, til seeds, haldi powder, red chilli powder, garam masala powder, dhana- Jeera powder, salt and powdered sugar to taste.
  4. Finely crush in khal batta green chilies, garlic and ginger. Add this too.
  5. Mix everything properly, since mixture has poha. Knead soft dough while adding little water at a go. At the end apply little oil to the kneaded dough and rest for only 5 min.
  6. Roll out puri (thin or medium of choice) and fry puris on medium flame. 

Serving Suggestion

  • Serve the warm poha puri with garam chai, or chatni.
