Vangyache Bharit is a special side dish prepared in Maharashtra suring summer time by mashing the grilled brinjal (eggplant) and mixing it with onion, herbs and spices. This type of bharit is generally prepared in summer time. My office friend use to bring this bharit in summer with Bhakri and Methamba.

Recipe For Vangyache Bharit


  1. Roast properly baigan on gas stove by greasing oil. (Don’t insert  garlic cloves in baigan which we generally do)
  2. Allow it to cool completely and peel off skin.
  3. Mash it up properly with spoon.
  4. To it add chopped 1 medium onion, handful fresh finely chopped coriander leaves, (optional are fresh coconut scrapped or danyacha kut ) 1-1.5 vati dahi, 1/2-1 inch grated ginger, salt and sugar to taste. Give a good mix.
  5. In a tadka pan heat ghee and temper with jeera kadipatta and 2 green chilli allow it to splutter as it enhances the taste.
  6. Pour tadka on mixture and give a good mix.
