Biryani Masala

(Biriyani Masala)


Ingredients

  • Dry red chillies - 3
  • Corriander seeds - 3 tblsp
  • Cumin seeds - 1 tblsp
  • Cinnamon sticks - 4
  • Bay Leaf - 3
  • Cloves - 10
  • Cardamon (Green) - 8
  • Black Cardamon - 8
  • Star Anise - 2
  • Fennel seeds - 1 tblsp
  • Pomegranate seeds - 1 tsp
  • Prunes (dried plums) - 8
  • Peppercorns - 1 tblsp
  • Kasoori Methi - 1 tsp
  • Mace (Javithri) - 1 tsp
  • Turmeric Powder - 1/4 tsp

Method

  • Blend all the above ingredients and store in an airtight container.

    2 questions - 1) are you using cinnamon sticks that we get at American store or the cinnamon bark that is available at Indian market here? Secondly, prunes though dried plums are not really dried but are quite sticky. When we add this to biryani masala, how long will it last meaning before it spoils? Please let me know. Thanks

    Hi Ometta, I use the cinnamon from Indian stores. You are right about the prunes. Sometimes they also have their seed inside.The above measurement will make masala for one time use. If you are making a bigger batch, just skip the prunes while making the powder . Add it along with the biriyani masala while making the biriyani. Some people do not like to add it at all in their biriyani.
