Just tried this recipe and we feel like we're back in Kerala!!!! It was absolutely delicious with a perfect balance of flavor and spice. We didn't have corn flour so we used coconut flour and coconut oil to fry the vegetables in, which gave it a nice flavor. We were afraid the soy and chili sauces would make it taste too Asian instead of Indian, but they just gave the umami and depth of flavor that elevated the dish. What a great find! Thank you for this recipe so we can re-visit South India in our kitchen.
