Banana Cake - submitted by Dahlia on 02-15-2008 (Banana Bread, Cake with Mushy Bananas)
Ingredients Bananas - 2-3 All purpose flour (Maida) - 1 1/2 cup Butter/Vegetable oil - 1/2 cup Sugar - 1 cup Egg - 1 Vanilla extract - 1 tsp Baking soda - 1 tsp Salt - a pinch Nuts (Cashews/Almonds) - 1/4 cup Raisins - 1/4 cup

Method 1. Mash the bananas nicely and mix the butter and sugar with it. 2. Beat the egg separately and add it to the above mixture. 3. Add the salt and baking soda to the flour. 4. Add this flour mixture to the wet ingredients mixing continuously by hand or using a hand mixer until everything is incorporated nicely. 5. Mix the raisins with little dry flour. This will prevent it from sinking to the bottom. 6. Finally add the nuts, raisins and vanilla extract and fold together using a patula. 7. Pour the mixture into a greased pan and bake for 25- 35 minutes in a oven preheated to 350 degree F. 8. Check if the cake is done by inserting a toothpick in the center of the cake. Reply :- Hi Mehnaaz, You can use sugar free products. The quatity equivalent of sugar is usually given in the box. You can use accordingly. |

I tried to make this cake 3 more times however it did not turn out perfect,the cake gets burnt from outside if i bake it @ 180 degree c however it remains uncooked from inside, I also tried to bake it @ 160 degrees & 150 but it did not rise properly...i am very disappointed, could you please suggest me the right temperature & time as i have dual heater otg, Also suggest me which kind of cake tin i should use to bake the cake. Reply :- Hi Nidhi, I'm so sorry that I am not able to help you out. I have a conventional oven and temperatures are perfect in that. Its so difficult to guess the problem without actually used a dual heater oven before.
One suggestion is, cook the cake in 180 degree. When the top starts browning, cover the cake with a butter paper and continue with the cooking. My assumption is that it will prevent the top from getting hard and browned.
About cake tins, you can use any type of cake pan. I have used glass pan, silicone pans as well as non stick pans. |

I tried this recipe twice however, my cake became hard from outer surface, i have a oven that has dual heaters and i baked this cake @ 180 c temperature for 25 mins...is that correct?

Hi Nidhi, I'm so sorry to hear that your cake turned hard. I make this cake quite often and it just turns perfect. Is it because of the dual heaters?? Is the cake getting cooked very fast?? Check the cake little earlier next time. |

Hi Abilasha, You can use either butter or vegetable oil. The taste is the same but the texture varies a little bit. Either way the cake is delicious so proceed with whatever you have on hand. |

I am new in Mumbai. Have not been able to find all purpose flour in shopping centres. I am living in Powai, Hiranandari Gardens. Any suggestions where to get it would be greatly appreciated. Reply :- All Purpose Flour is called 'Maida' in Mumbai!! You can find it in any grocery stores. |
