Eggplant Fry

 (Katharikai Varuval, Begun Bhaja, Bengali Brinjal Fry)


Ingredients
Eggplant - 1
Chilly powder - 1 tblsp
Turmeric powder - a pinch
Garam masala - a pinch (optional)
Salt - as needed
Lemon - 1/2

Oil - as needed (preferably mustard oil)

 

Method
1. Cut the eggplant into thin circles.
2. Season the eggplant circles with the above seasonings.
3. Shallow fry the eggplant in a griddle.
4. Flip the eggplant when once side browns.
5. When both the sides are browned, remove from griddle and add few drops of lemon juice on top.
6. Serve with rice or roti.

          Recently I had eggplant sandwich in a fast food restaurant, where they used this egg-plant fry along with slices of tomato, and basil leaves with toasted slices around....yummmmmmmmmmm.....
thanks for showing me how this eggplant fry comes out and I can now make my own with lot of modifications around it !!!!

         adding a pinch of sugar will do great. this is something that goes for almost all Bong preparations - veg or non veg.
