Zucchini is a type of summer squash that is seen in green and golden yellow colors. It belongs to the cucumber family and looks very much like it. This is used to prepare many savoury dishes in US, UK, Italy, Germany etc. The vegetable is usually harvested when it is young and tender. Only then the seeds will be soft and the vegetable also tastes good when cooked. The flowers are also sold for culinary use. I have seen fritters being prepared with flowers. Zucchini sweet bread is also quite popular.
These days zucchini is seen in Indian supermarkets. It is very similar to pumpkin and bottlegourd. It can be replaced in all traditional dishes prepared using these gourds. You may grate it, chop it or spiral cut it for using it in recipes. I have shared a few recipes below. Other than these, I also like to add zucchini to sambar, dal, adai etc. For all the Indian friends staying abroad, this vegetable is a must try. It goes very well with all Indian spices and flavors.
