Matar Karanji or Matar Gujiya is an common Maharashtrian snack made using green peas. Green peas along with coriander leaves, green chilies and garlic makes this snack spicy and tasty.

Recipe for Matar Karanji

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Serves: 4

Ingredients

  • Wheat flour - 2 cups (You can also use Maida. If using maida, then add 2 tsp fine rava too.)
  • Green Peas - 250 gms
  • Coriander Leaves - 1 big bunch
  • Green chilies - 3-4
  • Garlic - 8-9 cloves
  • Ginger - 1" piece
  • Cumin Seeds (jeera) - 1/2 tsp
  • Asafoetida (Hing) - 1 pinch
  • Carom Seeds (Ajwain) - 1-2 tsp
  • Salt - to taste
  • Sugar - to taste
  • Oil - 2 tsp
  • Oil - to fry
  • Ghee - 1 tsp

Method

  1. Take wheat atta (or maida plus fine rava) in a mixing bowl. Add ajwain, salt and ghee.
  2. Knead the dough with help of water. Dough should not be hard or loose.
  3. In a mixie jar, grind coriander leaves, green chilies, garlic and ginger to a fine paste.
  4. In a kadai heat oil, temper cumin seeds (jeera) and asafoetida (hing). Then add green peas and green vatan (ground paste), salt, sugar and 1/4 cup water. Give a good mix.
  5. Cover with lid and let the peas cook. Green peas hardly take time to cook. Make sure you cook peas till they could be slightly mashed. Also the matar usal (cooked green peas) should be dry. Let it cool down completely to stuff in karanji.
  6. Take a regular lemon size ball of the dough. Make a small puri out of it.
  7. Now stuff the puri with the cooked green peas and fold to shape it like a karanji. Seal the edges and deep fry till golden brown. Drain excess oil and enjoy.

Serving Suggestion

  • Serve the warm matar karanji as an evening snack with a cup of tea or coffee.
