Matar Karanji or Matar Gujiya is an common maharashtrian snack made using green peas. Green peas along with coriander, chilli and garlic makes this snack spicy and tasty.

Recipe for Matar Karanji


  • 250 gms green peas
  • 1 big bunch coriander
  • 3-4 green chilli
  • 8-9  garlic
  • 1 inch ginger
  • 1/2 teaspoon jeera
  • 1 pinch hing
  • 2 teaspoon oil plus oil to fry
  • 1 teaspoon ghee
  • 2 katori wheat atta or you can even use maida, if using maida then add 2 teaspoon fine rava too
  • 1 -2 teaspoon ajwain
  • Salt and sugar to taste


  1. Take wheat atta OR maida plus fine rava add ajwain salt and ghee  Knead the dough with help of water, dough should not hard or loose
  2. In a mixi jar grind coriander green chilli garlic and ginger to a fine paste
  3. In a kadai heat oil temper jeera and hing then add peas and green vatan salt sugar and 1/4 cup water and give a good mix
  4. Cover with lid and let the peas cook. Green peas hardly take time to cook. Make sure you cook peas till they could be slightly mashed also the matar usal should be dry. Let it cool down completely to stuff in karanji
  5. Take a regular lemon size ball and make a puri of it now stuff, stick, cut or fold to shape it karanji and deep fry.

Serving Suggestion

  • Serve the warm matar karanji as an evening snack with a cup of tea or coffee.
