Nachaniche Ambil is a perfect summer drink made with Ragi Millet Flour. It is not only perfect to beat the summer heat but also keeps your stomach full and quite healthy too. Try it out.

Recipe For Nachaniche Ambil

Ingredients

  • Ragi (Nachani) flour - 3-4 tbsp
  • Fresh curd - 5-6 tbsp
  • Garlic - 4-5 pods
  • Coriander Leaves - 5-6 fresh stems finely chopped
  • Salt - to taste
  • Cumin (jeera) powder - 1/2 to 1 tsp
  • Asafoetida (Hing) - 2-3 pinch
  • Black salt - 1/2 to 1 tsp
  • Water - as required to make taak (thin buttermilk)

Method

  1. In a bowl mix the ragi (nachani) flour and water little by little to make a lump free batter.
  2. Then again add enough water to make a thin consistency batter.
  3. Keep this mixture on a gas stove and let it cook on low heat.
  4. Add required salt and crushed garlic pods. Keep stirring continuously as it might form lumps.
  5. Once the mix starts cooking, it starts becoming thick. Switch off the gas stove when the mixture starts thickening. It should still be slightly thin as it thickens further when we cool.
  6. The cooked ragi (nachani) mix needs to be cooled. It becomes thick once cooled completely.
  7. Keep the glass to chill in deep freezers for 5-7 minutes.
  8. Now in a big bowl take fresh curd and add 2-3 glasses of normal or matka (mud pot) water.
  9. Add cumin (jeera) powder, black salt, asafoetida (hing). Whip it and make a thin watery consistency buttermilk.
  10. Take chilled glasses, pour nachani mixture in the bottom, add buttermilk and garnish with fresh chopped coriander leaves. Mix and enjoy.

Tips

  • Make sure you don't use fridge water as it does not have a cooling effect for the body. Try using matka water.
