Here is a quick raita / salad recipe made with spinach (palak) and yogurt (curd). This is one among a famous Maharashtrian side dish for roti. 

Recipe For Palak Koshimbir

Ingredients

  • Palak (Spinach) - a medium bunch
  • Fresh grated coconut - 1/2 cup (half katori)
  • Curd (Yogurt / Dahi) - 250 gms
  • Onion - 1 medium size
  • Green chilies - 2-3 
  • Fresh coriander leaves - 1/2 cup (half katori)
  • Sugar - as per taste
  • Salt - as per taste
  • Sandge mirchi - 4-5 
  • Desi Ghee - 2 tbsp
  • Cumin Seeds (Jeera) - 1 tsp

Method

  1. Finely chop fresh palak, onion, coriander leaves and green chilies.
  2. In a bowl mix together finely chopped palak leaves, onion and grated coconut.
  3. Add coriander leaves, dahi, sugar, salt and quickly mix it.
  4. In a tempering pan, add desi ghee. Once it becomes hot, fry sandge mirchi and add to mixing bowl. 
  5. In the same pan, add the remaining ghee add jeera (cumin seeds) and green chilies. Once both splutter add them to the koshimbir and give a good mix. Serve with roti.
