Potato Manchurian

Potato Manchurian is another tasty Indo-Chinese style preparation that I love to make. Potatoes are easily available in everyones homes. This is an awesome dish to make for unexpected guests. Crispy potato pieces coated with the tasty manchurian sauce makes it delicious.

Recipe For Potato Manchurian

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Serves: 4


For Frying

  • Potatoes – 4 or 5
  • All purpose flour (Maida) - 2 tbsp
  • Corn flour (or corn starch) - 3 tbsp
  • Ginger-garlic paste - 1 tsp
  • Red Chili powder - 1/2 tsp
  • Black Pepper powder -1 tsp
  • Salt - 1 tsp
  • Water - 3-4 cups

For Sauce

  • Onion -1 (cut into cubes)
  • Capsicum – ½ (cut in cubes)
  • Green Onion (Scallion) - 1 3-4 whites of spring onion (chopped)
  • Garlic – 1.5 tsp (finely chopped)
  • Ginger - 1 tsp (finely chopped)
  • Green Chilies - 2 (finely chopped)
  • Tomato Ketchup - 2 tbsp
  • Red Chili Sauce - 2 tsp (or as per your spice level)
  • Soy sauce - 1 tbsp
  • Vinegar -1 tsp
  • Sugar - ¼ tsp
  • Oil - 2 tbsp
  • Salt - to taste
  • Black Pepper Powder - 1/2 tsp
  • Corn Starch - 1 tbsp
  • Water - 1/2 cup


  1. Cut the potatoes into cubes. Dry them in a kitchen towel.
  2. Partially boil the potatoes in water. Be careful not to overcook. Strain the liquid and cool the pieces.
  3. In a bowl, take the ginger garlic paste, red chilli powder, black pepper powder and salt to this and mix together. Add corn flour, all-purpose flour and mix together.
  4. Add the boiled potato pieces to this and mix. Add 2-3 tbsp of water to help with coating.

  5. Heat oil in a kadai and fry the potato cubes. Fry in medium low oil till it becomes light brown.

  6. After frying all the potato pieces, heat up the oil once again.
  7. Fry a second time for just 30 seconds to make the pieces extra crispy.

  8. Now let’s prepare the sauce. In a pan, take 2 tbsp oil and sauté the finely chopped spring onions, ginger and garlic.

  9. Mix the tomato sauce, red chilli sauce, vinegar, soy sauce, corn flour and water in a bowl. Take water depending on the sauce you need.

  10. Add onion and capsicum cubes. Sauté for a minute.

  11. Add this sauce mix to the pan. Add salt, sugar and black pepper powder as needed. Bring it to a boil.

  12. Finally add the fried potato cubes and toss with the sauce so that each piece is coated well.

  13. Add finely chopped green onions and switch off.

Serving Suggestion

  • Potato Manchurian can be served as a quick appetizer or with any fried rice. Here I've served the dry aloo manchurian with egg fried rice.
