Wild rice soup is a comforting, wholesome and hearty dish that is a prefect dinner on a cold winter night. Wild rice has a nutty and chewy texture. I personally love the texture of this wild rice and used to make this often during my stay in MN, USA. This soup is a blend of wild rice, cream and a bunch of vegetables making this a complete and satisfying meal. Recipe For Wild Rice Soup
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Serves: 4
Ingredients
- Wild rice - 1 cup
- Water - 3 cups
- Chicken Stock - 4 cups
- Onion - 1 (chopped)
- Carrot - 1 big (diced)
- Celery - 1 stalk (diced)
- Mushroom (or Chicken) - 1 cup (chopped)
- Butter - 2 tbsp
- Oil - 1 tbsp
- Corn Flour - 2 tbsp
- Heavy Cream - 1/2 cup
- Milk - 1 cup
- Italian Herbs - 1 tsp
- Salt and pepper - to taste
Method
- Wash the wild rice and cook it in 3 cups of water in a pressure cooker for 4 whistles.
- In a big heavy bottomed pot, melt the butter over medium heat. Add the chopped onion, carrots, celery and mushroom (or shredded cooked chicken). Saute for about 5 minutes until it softens.
- Add the corn flour and cook for another 2 minutes. Gradually add the milk stirring constantly until a smooth and thick sauce is formed.
- By now the pressure cooker pressure will be released. Add this cooked wild rice and another 3-4 cups of chicken stock to the pot.
- Bring it to a boil. Add Italian herbs, salt and pepper as per taste.
- Simmer for another 10 minutes stirring occasionally and switch off.
