Scallion Chicken Recipe

A quick stir fry made with chicken strips, green onions (scallions) and spices. This Chinese scallion chicken stir fry is a dry chicken dish which goes very well with any rice.

Recipe For Scallion Chicken

Serves : 3

Ingredients

  • Scallions (Spring Onion/ Green Onion) - 1 bunch (sliced)
  • Chicken - 1 lb (boneless, skinless)
  • Ginger garlic Paste - 1 tsp
  • Red Chilly Powder - 1/2 tsp
  • Black Pepper Powder - 1/2 tsp
  • Turmeric Powder - a pinch
  • Coriander Powder - 1/2 tsp
  • Garam Masala - 1/4 tsp
  • Lemon Juice - 3 tsp
  • Salt - as needed
  • Oil - 2 tbsp

Method

  1. Clean the chicken and cut it into strips. Add the lemon juice, ginger garlic paste, coriander powder, black pepper powder, turmeric powder, red chilly powder and garam masala to the chicken. 
  2. Mix it thoroughly and let it marinate for at least half an hour.
  3. Heat oil in a wok / kadai. Add the white portion of the spring onions and stir fry for a couple of minutes.
  4. Next add the marinated chicken and fry on medium high flame till the chicken is cooked. This should take about 5-7 minutes.
  5. Add the green leaves of the scallions and continue to stir fry. All the moisture from the chicken should dry out.

Variation

  • Instead of using all Indian spices to marinate the chicken, you can try using 2 tsp of soy sauce, 1 tsp of chilli sauce and 2 tsp of lemon juice. This gives a totally different flavor but is equally delicious.

Serving Suggestion

  • Serve as a side with fried rice, noodles, soups or use as a stuffing for making sandwiches, wraps etc.

I tried this recipe and it came out very well.. along with Indian spices I also added soya sauce. .. and at the end gave a capsicum and onion fried with the same oil. . It was yummm. . Thanks for sharing this.

Hi Ryvenna, If you use dry spices, then 5-7 minutes on high flame will be perfect. When adding liquid sauce, first fry the chicken pieces on high heat till it browns. Later add the sauce and fry for another 1 or 2 minutes.

Hi,
I tried your recipe using soy sauce, lemon juice, and the chilli sauce (Mae Ploy sweet chilli sauce) and it didn't taste good at all. And the chicken got very dry and hard. If I cooked it for only 7 minutes, then I feel the outside wouldn't brown. Does your chicken brown properly on the outsides in 7 min?
Also, what chilli sauce do you use?
