Green Chutney Sandwich

That friday was a power cut in our area.So I couldn’t grind batter for idlis for the upcoming week. I was wondering what to cook for the weekend.There was only bread loaf left in the fridge. I got an idea of making green chutney sandwiches for the breakfast. I went to the near by stop and bought some fresh herbs. In the next half an hour, I had hot sandwiches ready for breakfast. I toasted all the sandwiches before the kids woke up and put it in a hot box.They loved it  and it was a very easy breakfast to prepare for me. I made it so quick that I could concentrate on some cleaning chores around the house.

Green Chutney is used to make most of the Indian style vegetarian sandwiches, especially the Bombay Sandwich. The chutney adds a spicy, tangy taste to the sandwich. I prefer to keep some green chutney always on hand. Also I grow these herbs in my balcony. The chutney tastes best when made with fresh herbs. 

I have shared several ways in which sandwich can be made using green chutney. Most of the times I serve it plain just spreading some chutney. Other times I add a cheese slice or some veggies. Its great for breakfast, evening snack, for lunch box or picnics.

Recipe for Green Chutney Sandwich

Preparation Time : 10 minutes
Cooking Time : 5-10 minutes
Serves : 2-3

Ingredients

  • Sandwich bread - 6 slices
  • Butter - as needed
  • Cilantro - 1 cup
  • Mint leaves - handful
  • Lemon juice - 1 tbsp
  • Green Chillies - 5
  • Cumin seeds - 1 tsp
  • Chaat Masala - 1/2 tsp (optional)
  • Salt - to taste

Method

  1. Combine the cilantro, mint leaves, green chillies, cumin seeds, salt, chaat masala and lemon juice in a blender/mixie.
  2. Make a smooth paste (green chutney) without adding water. The lemon juice should be enough. 
  3. Take 2 slices of bread and trim the edges if desired.
  4. Apply butter on one side of both the bread slices. (If you prefer, you can toast the bread.)
  5. Spread a generous amount of green chutney on top of the butter.
  6. Put one piece of bread on top of the other to make a sandwich.
  7. You can have this plain green chutney sandwich. Other options are to have a cheese slice in between or add few pieces of cucumber in between and make a Cucumber Sandwich or place an omelette in between to make  Omelette Sandwich.
  8. Repeat the same with the other slices of bread.

Serving Green Chutney Sandwich

  • Sandwiches made with green chutney is packed with flavour as the chutney is spicy, tangy and tasty. It doesn't need any accompaniment as such.
  • If required, some tomato ketchup can be used along. It makes a wonderful snack or party appetizer.
  • To make a complete meal, serve this sandwich with some chips or fries and a soup.

You should probably make the chutney with 2 or 3 bunches of cilantro and mint. You can use as needed.

           No you dont have to cook it. The acidity from the lemon juice will remove the raw flavour and smell of the leaves.

          Cilantro is nothing but 'Corriander Leaves'. In India, you can find it pretty much everywhere.
