Kolhapuri Chicken Curry

Kolhapuri Chicken Curry is a popular curry from the kolhapur district of Maharshtra. Traditionally Kolhapuri dishes are known for its spiciness and aroma. Freshly prepared masala is used which make this curry very delicious.

Recipe For Kolhapuri Chicken Curry

Preparation time: 20 minutes
Cooking time: 40 minutes
Serves: 4-6

Ingredients

  • Chicken – ½ kg
  • Hot Water – about 2 cups

For Marination

  • Red Chili Powder – 1 tsp
  • Turmeric Powder – ½ tsp
  • Garam Masala – 1 tsp
  • Ginger Garlic Paste – 1 tbsp
  • Lemon Juice – 1 tbsp

For Masala

  • Oil – 3 tbsp
  • Cumin Seeds – 1 tsp
  • Coriander seeds – 1 tbsp
  • Sesame seeds – 2 tbsp
  • Black Peppercorns – 1 tsp
  • Poppy seeds – 1 tbsp
  • Dry Red Kashmiri Chilies – 7 to 8
  • Garlic – 6-7 cloves
  • Whole Garam Masala (1 Bay leaf, 2 Green Cardamom, 3 Cloves, 1 star anise)
  • Onion – 1 big (sliced)
  • Tomato – 1 (sliced)
  • Dry shredded Coconut – ¼ cup

Method

  1. Wash the chicken pieces and remove excess water. Add all the ingredients for marination - ginger garlic paste, red chilli powder, garam masala, turmeric powder, salt and lemon juice.
  2. Toss the chicken well with all the spices. Let this rest to marinate for about half an hour.
  3. Heat 1-2 tbsp oil in a kadai and add the whole garam masala, cumin seeds, coriander seeds, sesame seeds, poppy seeds, black peppercorns, dry red chilies and chopped garlic.
  4. Fry for about 30 seconds till the spices gives a nice aroma and starts becoming golden brown.
  5. Add the dry grated coconut and sliced onions at this stage and continue roasting. Roast till the onions becomes golden brown.
  6. Switch off and add the sliced tomatoes. Let this cool a bit.
  7. Take all this in a mixie jar and grind to a smooth paste with required water.
  8. Take a clean kadai and add oil. Add the ground masala paste and cook for 4-5 minutes.
  9. Add the marinated chicken pieces and keep tossing with the masala. Keep frying the chicken continuously with the masala over medium heat till it becomes transparent. 
  10. Add hot water depending on how much gravy you desire. Cover and cook for 20 minutes.
  11. By now chicken will be perfectly cooked and oil starts separating from the gravy.

Serving Suggestion

  • Serve the warm Kolhapuri Chicken Curry with plain rice or chapathi or parotta.
