Kundgule is one among the traditional recipes from the Indian state of Maharashtra. This marathi dish is made with Jawar, wheat flour and some spices. It is a winter special snack recipe. You can serve it as a evening snack or for breakfast.

Recipe For Kundgule

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 8-10

Ingredients

  • Wheat flour - 2 cups
  • Jowar flour - 1 cup
  • Besan (Gram Flour) - 1/2 cup
  • Red / green chilies - 5 to 6
  • Garlic - 8 to 10
  • Roasted Cumin (jeera) - 1 tsp
  • Sesame Seeds (Til) - 1 tbsp
  • Ajwain (Carom Seeds) - 1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Asafoetida - a pinch
  • Salt - to taste
  • Finely chopped coriander leaves (kothimbir) - 1 cup
  • Oil - for frying

Method

  1. In a big bowl take 2 cups wheat atta, 1 cup jowar atta and 1/2 cup besan. Mix together.
  2. In a mixie jar take 5-6 dark red / green chilies, 8-10 garlic cloves and 1 tsp roasted jeera (cumin seeds). Grind roughly and add to flour mix.
  3. Then add big 1 tbsp sesame seeds and 1/2 tsp carom seeds (ajwain), turmeric powder, asafoetida (hing), salt to taste and 1 big cup of chopped kothimbir (coriander leaves).
  4. Prepare dough with required water. Dough should be slightly soft. Let it rest for 5 minutes.
  5. Roll out small puris. Puri should be slightly thick than our regular atta (wheat) puris.
  6. Heat oil in a kadai and then on medium to slow flame fry these puris. Drain excess oil and serve.

Serving Suggestion

  • You can serve it as a evening snack or for breakfast with chai.
