Biscuit and Gravy

Ingredients 

For the Biscuits
All purpose flour - 2 cups
Baking soda - 3 tsp

Salt - a pinch

Cold Butter - 1 tblsp (diced)

Yogurt/Buttermilk - 1 cup

 

For the Gravy 
Breakfast sausage/ any ground meat (Kheema) - 1/2 lb

Butter -  2 tblsp

All purpose flour - 4 tblsp
Cold milk - 3 cups
Salt and pepper - to taste

  

Method

For the Biscuits

1. Combine together the dry ingredients (flour, salt and baking soda).

2. Add the butter, buttermilk/yogurt and knead the dough. (Do not over knead the dough. This will make the biscuits tough.)

3. Pat and flatten the dough to a 1 " thick mass.

4. Cut out biscuits using a biscuit cutter. 

5. Place them on a parchment paper on a baking tray and bake in a oven preheated to 400-degrees. 

6. Remove in 8-10 minutes when the biscuits are golden in color.

 

For the Gravy

1. Heat a pan and saute the sausage/ground meat until it is cooked.

2. Remove the sausage and add the butter to the same pan.

3. Then add the flour a little at a time whisking constantly.  Cook for about 2-3 minutes.

4. Now add the cold milk a little by little, whisking continuously. 

5. When the milk starts to thicken, add the sausage/ground meat back along with salt and pepper to taste. 

6. Cut the biscuit in half, pour the gravy over it and enjoy.

What vegetarian stuff can be used instead of ground meat/sausage ?

          The vegetarian alternative for ground meat would be soy granules.
