Cucumber Raita

Ingredients

  • Curd - 1 cup (You can use home made curd or store bought plain yogurt)
  • Cucumber - 1 big (or 2 small)
  • Salt - 1/2 tsp
  • Finely chopped cilantro (coriander leaves) - 1-2 tsp

Seasoning

  • Black Salt - to taste
  • Roasted cumin powder - a pinch
  • Pepper powder - a pinch
  • Red Chilly powder - a pinch
  • Sugar - a pinch

Method

  1. Wash the cucumber and peel it. Chop it into small cubes or grate it.
  2. Take the yogurt in a mixing bowl. Whisk it till it becomes smooth and creamy.
  3. Mix in the cucumber, salt and coriander leaves.
  4. Add the seasoning ingredients as per your taste.
  5. Mix it well. Chill it and serve.

Variations

  • All the ingredients under 'Seasoning' are completely optional and can be added according to individual taste. Usually I prefer to add all the seasoning when I make the raita as a side for parathas. However when I make raita for biryani, I prefer to keep it plain with just some salt.
  • In south India some people like to add a tempering of mustard seeds, dry red chilly, asafoetida and curry leaves to the raita. This is called velarikkai pachadi and can be served as a side dish with white rice and some curry.
