Capsicum Egg Bhurji (Scrambled Eggs with Bell Peppers)

Egg Bhurji with vegetables is one of the tastiest and quickest preparations on any busy day. I make it with any random vegetables that I have on hand. However, my personal favourite is the one made with capsicum or bell peppers. I like to make this with colourful bell peppers. This makes the dish so attractive with all the vibrant colours. It goes well with pretty much any main course. Do give this a try and share your comments.

Recipe For Capsicum Egg Bhurji

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Serves: 4


  • Capsicum (Bell Peppers) – ½ each (red, green & yellow)
  • Eggs – 4
  • Onion – 1 (finely chopped)
  • Green Chilies – 4
  • Salt – 3/4 tsp
  • Crushed Black Pepper – 1 tsp
  • Oil – 2 tbsp
  • Mustard Seeds – 1 tsp
  • Curry Leaves – few


  1. Wash the bell peppers and chop it into small cubes. You can make this with just green capsicum or make it colourful with all coloured ones. Also, chop the onions and slit the green chilies finely.
  2. Crack the eggs in a bowl, beat it with salt and crushed black pepper and keep it ready.
  3. Heat oil in a kadai, splutter some mustard seeds and curry leaves. Add the chopped onions and saute for 1-2 minutes.
  4. Add the chopped capsicum and some salt. Cook for 2 minutes. Capsicum has lot of moisture and it cooks easily. The dish tastes good if the capsicum remains crunchy. So do not over cook.
  5. Spread the capsicum evenly and add the beaten eggs on top of this.
  6. After a minute, stir-fry together on medium high heat. Cook until all the moisture evaporates. Switch off and serve immediately.

Serving Suggestion

  • This egg capsicum bhurji goes well with white rice and rasam and chapathi.
  • It can also be served as a light meal with toast.
