Egg Bhurji with vegetables is one of the tastiest and quickest preparations on any busy day. I make it with any random vegetables that I have on hand. However, my personal favourite is the one made with capsicum or bell peppers. I like to make this with colourful bell peppers. This makes the dish so attractive with all the vibrant colours. It goes well with pretty much any main course. Do give this a try and share your comments.
