Cornmeal Idli & Dosa

Recipe For Cornmeal Idli & Dosa

Ingredients

  • Cornmeal - 2 cups
  • Sour Yogurt - 2 cups
  • Carrot - 1 (grated)
  • Cilantro - handful (finely chopped)
  • Curry Leaves - 1 strand (finely chopped)
  • Water - as needed for batter
  • Oil- 2 tbsp
  • Cumin seeds - 1 tsp
  • Mustard seeds- 1 tsp
  • Channa dal- 1 tsp

Method

  1. Heat oil in a pan and splutter the mustard seeds, cumin seeds and channa dal.
  2. Add the corn meal to this and roast it for few minutes. This step is optional but gives a nice nutty flavor. If you are in a hurry, skip this step.
  3. Switch off and add grated carrot, chopped curry leaves, cilantro, yogurt and required salt.
  4. Mix well and let this rest for 10-15 minutes.
  5. Add water to bring it to the right consistency for making idlis or dosas.
  6. For Idli: Add a pinch of baking soda to the above batter and mix nicely. Steam them in idli plates for 15 minutes. 
    For Dosa: Add little more water to bring the water to the right consistency (similar to rava dosa batter). Spread from the outside like rava dosa.

Yes you can. Make sure it is cornmeal and not corn flour or corn starch.

I wished you would put for how many this would serve as a snack. As a non-Indian person, I have no idea what a idli or dosa consistency is! Please specify or approximately, what amount of water is needed for each of the snack!

Hi, For making dosas, the batter should be like a pancake batter. For making idlis, it should be little thicker in consistency.
Also the above measurement serves 4-6 adults. Hope this helps.

hey great recipe !!! one doubt....after roasting corn and switching off gas do we add the remaining items into the hot pan or do we have to cool it ?

After roasting it, take it out into another mixing bowl. This will cool it a bit rather than keeping it in the hot pan. After that add the remaining ingredients.

Corn Meal is the flour of yellow corn. You get it in india these days as yellow corn flour or yellow puttu flour.

Hi Raji,
Corn meal is different. It is coarse flour made from dried corn. The texture is similar to rava and the colour is yellowish. But cornflour has more of the corn starch in it. It is good for thickening soups due to its starchy texture. I haven't tried with corn flour so I'm not sure if it will work out.

    Hi Suvarn, Cornmeal is coarsely ground corn. It has the texture ot rava and is white or yellow in colour. I'm not sure of its telugu name. I guess you will be able to find it in some major grocery stores. If you find the name, please share with us so that it will be helpful for many.

    I am Indian living in Germany...by mistake i brought cornmeal instead of corn flour and didn't know what to do with it....then i searched on internet and found ur site...i tried all the recipes for cornmeal and all came out very well...really very thankful to u...keep up the good work..ur site is really beautifully made...

    Thank You Rohini. Even I got Cornmeal by mistake the very first time. But after trying our all these recipes, nowadays I buy cornmeal regularly.

    You can find corn meal is most grocery stores. It looks like rava but is yellow in colour.

    Hi Sunitha, Cornmeal is different from corn flour. Corn meal is coarsely ground flour from dried corn. Corn flour has more of the corn starch in it and it is finer in texture.
