About Cauliflower
Cauliflower is a vegetable that belongs to the same family as cabbage. It is found in four colors as seen in the above picture - white, purple, orange and green. The white one is the most common one while the other colors are also found. Though the colors are different, the flavors are kind of similar. I have cooked with all the colors. The purple cauliflower tastes little nuttier whereas the orange variety is very similar to white cauliflower. It is said to be sweeter but I never found a difference. The purple cauliflower has higher antioxidants and cancer fighting components. The orange one has higher beta carotene and Vitamin A. It is often known as cheddar cauliflower since its color resembles cheddar cheese. The green cauliflower looks and also tastes more like broccoli. It is a cross between cauliflower and broccoli and is also known as brocco-flower.
Any color cauliflower can be used for any of the recipes. Use it to make beautiful colorful presentations in your meals to impress kids or guests. The only thing to look for while buying any type of cauliflower is to see if the florets are tightly packed and has not started blooming. It should have a fresh with uniform color and without any blemishes.
The general rule about cooking with cauliflower is not to overcook. Cauliflower becomes mushy and tasteless when overcooked. I love to cook it while maintaining its crunchy texture in all my dishes. Also, you need to soak the cauliflower florets in salted warm water to bring all the hidden worms out. Cauliflower can be eaten raw but it is always advisable to blanch it for at least 30 seconds before adding to salads. You can use cauliflower to make soups, salads, fried snacks, rice based dishes, curries, bread varieties etc. I have shared many recipes below to use cauliflower in your diet.
