Carrot is a commonly available vegetable that is used as part of many dishes like biryani, fried rice, noodles, soups, kurmas etc. It is usually orange in color. I have also seen yellow, red and purple carrots. It is a powerful anti-oxidant and is also supposed to be improve vision. Carrots can be enjoyed raw.
